Chardonnay is one of the Languedoc’s signature white grapes, but Michel gives the variety a new twist with this enjoyable, crisp wine. He has turned to some higher-altitude terroirs in Limoux and the Haute-Vallée de l’Aude, where elevations of 350 to 450 metres help to produce fresh, delicious fruit.
